This weeks recipe is one that my Dad loves to make. I think it’s simply delicious – I sometimes add a tablespoon of chopped coriander to mine. If making this for kids the jalapeño may be too spicy, so I would suggest substituting for chopped red pepper.

Cooking time: 10 minutes
Ingredients
2 tortillas (corn or flour)
3 tablespoons canned refried beans
50g cheese, grated
2 tablespoons tomato salsa (mild if making for kids)
4 jalapeño or red peppers (mild for kids), chopped small
1 tablespoon fresh coriander, roughly chopped (optional)
Method

Spread the tortillas with the refried bean mixture, and spread the tomato salsa on top.

Evenly scatter the grated cheese and jalapeño/red pepper on top. sprinkle on the coriander (if using)

Fold the tortillas into half-moon shapes and fry in a dry (no oil required) hot pan until browned on both sides and heated through and the cheese is melty.

Serve immediately.
