As it’s Father’s Day here in the UK, I thought I’d share this from my new cookbook At My Table, it’s my Dad’s recipe which has been adopted by friends and family everywhere. It has a real kick to it, so please drink it responsibly. I have to say, Dad makes the best margarita I have ever tasted, full stop!
Serves: 2
Prep time: 10 minutes
Ingredients
1 lime, halved, for rubbing around the rim of the glass
finely ground sea salt, for lightly salting the rim of the glass
2 shots of tequila
2 shots of Cointreau, or 1 shot Cointreau and 1 shot triple sec
1 orange, juiced
3 limes, juiced
Ice cubes
Method
- To salt the rimes of the glasses, run the half-cut lime around the rim of each glass. Fill a saucer with super fine sea salt. Dab each glass lightly into the salt, turning it slowly so that the outer rim is covered (not the inside or it will make your cocktail too salty when you take a sip).
- Mix the remaining ingredients (except the ice) in a cocktail shaker, adding the ice at the last minute, then shake vigorously, pour and enjoy!
